Coconut Cookies

I’m not sure if there is much a cup of tea and a good biscuit can’t fix! It’s definitely one of life’s simple pleasures.

If you are on dietary restrictions it can be so hard to find a decent biscuit recipe and I’m not a fan of the commercial packaged biccies. This recipe is soooo easy, you can throw it together anytime with ingredients you just have on hand in the cupboard, there’s not too much fancy stuff. Best of all guests will also love them and they won’t even know it’s a healthy alternative. These are gluten, grain, nut & refined sugar free.

cookie dough


125g butter
1/4 cup honey
1 tsp vanilla powder
1 egg
1/2 cup coconut flour
1 cup dessicated coconut
small pinch salt


Preheat oven to 170C.

Beat butter, honey & vanilla till pale and creamy.

Add egg and beat again till combined.

Fold in coconut flour & dessicated coconut & pinch salt till combined.

Line a tray with baking paper. Wet hands so mixture doesn’t stick and take teaspoonfuls and roll into balls.  Wet a fork and press down softly to flatten.

Bake for approx 10 minutes or until golden brown. Set aside to cool and enjoy.

This mixture will make around 20 biscuits and will store in an airtight container for up to a week.lucky cookies.jpg
