Watermelon Jewel Salad

This salad is Summer personified, you actually NEED this at your next barbeque! Beachy watermelon contrasting with peppery rocket and featuring little sparkling jewels of pomegranate. It’s as tasty as it is attractive.

INGREDIENTS

1/4 a small watermelon, skin off and cubed
3 handfuls rocket leaves
200g fetta cubed
1/3 cup toasted pine nuts
1/2 pomegrante, seeds knocked out*
4 tblsp apple cider vinegar

METHOD watermelon top (1280x1179)

Assemble ingredients in a large dish or serving platter. You will not toss this salad as the ingredients can be a little delicate and the pomegranate seeds will stain the feta so just distribute evenly.

Splash the apple cider vinegar over the top and serve.
