Paleo Pancakes

This is another recipe that has stood the test of time with our family. When we started the gut healing GAPS Protocol a couple of years ago as treatment for my eldest who has Autism I tried sooo many pancake recipes. Ah the fails!! It actually tipped me over at one point early on in the protocol, scraping another wasted batch of sticking, crappy, crumbly pancake fail into the bin. Herb & Mustard Vegie Fritatta

We have this dish about once a week when we have vegies left over from dinner the night before that need to be used up. Don’t hold this against it though! It honestly is as tasty as it is nutritious.
