Grain Free Pancakes

This is another recipe that has stood the test of time with our family. When we started the gut healing GAPS Protocol a couple of years ago as treatment for my eldest who has Autism I tried sooo many pancake recipes. Ah the fails!! It actually tipped me over at one point early on in the protocol, scraping another wasted batch of sticking, crappy, crumbly pancake fail into the bin. That crumbly pancake mix wasn’t just a bunch of ingredients that didn’t work out – it was my time, my dollars, it was my love for my family, food has always been a way I express my love. So let me save you the heartache with this awesome, truly tried and many times tested recipe! These pancakes cook easily just like regular pancakes. They hold their shape and you can even use this mixture in a waffle maker – kids love that!!

This recipe uses almond flour (meal), down the track I will post a recipe that is grain free but also nut free if you like. If you don’t have a nut allergy please try this one though as it’s definitely our favourite.

This recipe is grain free, gluten free, sugar free and can be made dairy free if required. This recipe is suitable for GAPS or Paleo protocols.


1 1/2 cups almond flour (meal)
1/2 tsp baking powder
3 eggs
1 cup of milk of choice
3 tblsp coconut oil for frying


Place all the ingredients except for the coconut oil into a large mixing bowl.

Whisk together until very well combined.

Now let rest for 5 minutes, this will allow the almond meal to soak up some of the liquid. You will notice the mixture become thicker and this will give you a great cooking pancake! No sticking and no crumbling.

Heat a fry pan over medium heat and add a bit of coconut oil at a time. Wait till the pan is slightly smoking and add a ladle of mixture to cook at a time.

The pancake is ready to flip when you see the bubbles appear in the mixture. This is usually 3-4 minutes.

Flip and cook for only a minute or two on the other side.

Stack and serve with berries, yoghurt, cream, honey, pure maple syrup, Everymite, peanut butter or bacon!

How good do they look!! They’re so tasty and won’t weigh you down.
