Grain Free Crackers

Don’t be fooled by how hard (or fiddly) making crackers might seem –  these are honestly really easy to make. I usually make a batch of these on a Sunday and they well and truly last us the whole week. That’s for the 4 of us, lunchboxes and all! These are also great for entertaining, your guests will love them and they are just perfect for platters.crackr stack (1280x838).jpgThese crackers use a variety of seeds so they are totally ok for lunchboxes. The ingredients aren’t too fancy and are really affordable and easily sourced. If you have these ingredients on hand it’s just so easy to grab from the pantry and whip up a batch.

These crackers are grain free, gluten free, egg free, dairy free and suitable for GAPS and Paleo protocols.

INGREDIENTS

1 cup sunflower seeds
1 cup pepitas (pumpkin seeds)
1/4 cup flax seed (linseed)
1/4 cup poppy or sesame seeds
1/3 cup water
1/2 tsp salt + additional 1/2 tsp to sprinkle on top

METHOD

Preheat oven to 170ºC

Place the sunflower seeds, pepitas and flax seed into a food processor, thermomix or blender and mill till it becomes a fine ‘flour’.

Add the poppy seeds or sesame seeds and 1/2 tsp of sea salt and blend again. These don’t have to be broken down completely.

Add water and blend again.  It might seem too wet at first but let it rest for 5 minutes and it will thicken out to a really nice even texture and will clump together in a ball.

Roll out 1/4 of the mixture between two sheets of baking paper. You can roll this quite thin.cracker roll (1280x762).jpgNow you can either cut shapes with a cookie cutter, or if you want a really quick method simply use a pizza wheel to score into squares. Just run the pizza cutter lengthways and the width ways to create squares. You can pop this straight into the oven on a baking tray, no need to separate them first, once it’s cooked they will easily snap apart. If you are using a cookie cutter just cut your mixture and use a spatula to lift the shapes and put onto a tray lined with baking paper.cracker pizza cutter (1109x1280)Sprinkle the crackers with sea salt and bake in the oven for around 15 minutes, until golden.crackers tray (1280x853).jpgAllow to cool. These crackers will keep for 2 weeks in the pantry in an airtight container.

    1. Hi lovely, I haven’t tried to make these without and I’m not feeling very confident about it as they really act like a binder. If you can have eggs I’d really recommend Elana’s Pantry Salt & Pepper Crackers – omg they are delicious!! Xx
