This really is the Best Ever Banana Bread. I had so many attempts at creating a healthy recipe that still gave us everything that’s good about banana bread – natural fruit sweetness and flavour, a bread that can slice and not crumble and of course that soft, indulgent texture. This recipe is perfection! I also really wanted a recipe that was egg free, I have some beautiful friends that are egg intolerant (hi guys!). I am so happy that the Best Ever Banana Bread is egg free, dairy free, gluten free, grain free, nut free, refined sugar free and suitable for GAPS & Paleo protocols. You are not going to feel like you are missing out on a thing with this one! So here’s how to make it ♥
Preheat oven to 170ºC.
In a large bowl peel and mash the bananas with a fork.
Ok this couldn’t be easier – add the rest of the ingredients and mix! Mix till well combined.
Line a loaf pan with baking paper and put the banana bread mixture in.
Smooth the top with the back of a wet spoon or a spatula.
Place in the oven and bake for 50 minutes, until golden brown.
Remove from the oven and allow to cool for at least 20 minutes before slicing.Now this is great to pre-slice and pop in the freezer for convenience. It’s great for lunchboxes. If you just put a slice straight from the freezer into the lunchbox it will naturally defrost and be ready by lunchtime.
You can also try these as a muffin. Just line a muffin tin with cases and adjust your baking time (it will be less).
