I have a lot to thank my cravings for. I knew exactly what I wanted with this slice and it took a few goes to get it right, but it’s here! And it’s so delicious ♥ The tartness of the raspberries and yoghurt combines beautifully with the sweetness of the slice base. It’s gorgeous for adults, guests and the kids will absolutely love it too.I felt like a recipe without honey so it really cleverly uses pitted dates, and no refined sugar. Wait till you see how the dates go in, it’s so cool, and easy!
This recipe is grain free, gluten free, refined sugar free, nut free (perfect for lunchboxes) and suitable for GAPS protocol. It will make about 20 slices.
Preheat oven to 170ºC.
You will start with the base first.
In a food processor, blender or thermomix add butter and pitted dates and blend till chopped finely and well combined. I used a thermomix on speed 8 for around 40 seconds.Place this butter date mixture into a mixing bowl and add the desiccated coconut, 1/4 cup coconut flour, 2 eggs & vanilla extract.
Mix till very well combined.
Line a slice dish with baking paper, I used a ceramic baking dish approximately 30 x 30 cms.
With wet hands push the mixture down to form the slice base.Put one side and start on your topping.
In a mixing bowl combine the yoghurt, 3 tblsp coconut flour, egg and vanilla and mix well.
Pour the topping over your base mixture and smooth over evenly with a spatula.Now sprinkle the frozen berries all over the top evenly.
Bake in the oven for 35 minutes.
Remove from the oven an allow to cool completely before removing from the slice dish and cutting into slices. Don’t skip this part! It’s important to let it cool to set.
This will keep in the fridge for 5 days, or in the freezer for up to three months.*TIP* This is soooooo good straight from the freezer! I know because I’ve just eaten a piece while writing this! You can also put into a lunchbox straight from the freezer and it will defrosted and delish by lunchtime for the kids.
