I think everyone knows that I love citrus desserts by now! I like to keep it super easy so this one just has 5 ingredients and will take no more than 10 minutes to make. Throw in the gut healing qualities of grass fed gelatin and you have one fantastic dessert that’s great for kids, but also great for guests and entertaining.This easy recipe is free from dairy, nuts, eggs, gluten, refined sugar and grains. It is suitable for GAPS & Paleo protocols. Makes 6.
3 tblsp quality grass fed gelatin*
1 large passionfruit to garnish (optional)

Place the coconut milk, lime juice, honey and passionfruit pulp into a pan on a stove top. Mix with a whisk gently to combine.
Sprinkle in the gelatin a tablespoon at a time whisking while you do so, so there’s no lumps. Repeat until all the gelatin is mixed in.
Over a very gentle heat continue to whisk gently for 8 minutes. Make sure the mixture does not come to the boil! The heat should be too low for that anyway. The mixture will be heated and thin and silky.
Pour into moulds or ramikens. I do 6 ramekins with half the mixture, then top up with the other half and this seems to evenly distribute the passionfruit seeds a bit better.
Allow to sit on the bench and cool for 15 minutes, then place in the fridge for an hour and half to set. Not popping them in the fridge straight away will give them a more shiny finish and they will not go rubbery.
Now it’s time to tip them out! I use a butter knife that I’ve heated under hot water and slide it around the panna cotta to loosen from the mould – then tip out!
Top with the pulp of the extra passionfruit and serve. These are great on their own or try with double cream or coconut yoghurt if needing to be dairy free.
