Strawberry Smoothie Bliss Balls

You’ve got to love a little sweet snack sometimes. This recipe takes 10 minutes to make, for one month of handy goodness! This is a really great recipe to get young kids involved with, you probably won’t end up with 30 balls this way, but hey at least it’s all nourishing stuff.ballcoverThis recipe is gluten, grain, dairy and egg free and suitable for GAPS protocol.

Makes 30 pieces – enough for one for each day of the month!

INGREDIENTS

1 cup raw almonds
2 cups desiccated coconut
1 punnet strawberries (250g)
10 medjool dates, pitted
1 tsp vanilla extract
Tiny pinch sea salt
Extra desiccated coconut for rolling (approx. 1/4 cup – optional)ball1METHOD

Wash your strawberries and take off the green tops.

Place everything in to a blender, food processor or thermomix.

Blend till your preferred consistency. I like mine to have a little texture so I blended in my Thermomix at speed 5 for 12 seconds, scraped down the sides and blended again at speed 5 for another 6 seconds.

Take small tablespoons of the mixture and roll into balls. The mixture will be quite soft – this will firm up in the fridge / freezer so don’t stress.

Roll the balls into the extra coconut to coat.

These can be stored in the freezer if you will have them over the month. Otherwise keep them in the fridge if your family will snaffle them all before.
