I’m usually driven with meals with what we have on hand and what is cheap and in season at the time. I think by now everyone knows I’m usually
meal planning flying by the seat of my pants making meals for my three beautiful kids. I think you will love this recipe – it takes just a couple of minutes to make, it’s easy, it’s cheap and it’s so fresh, nourishing and detoxifying.This recipe serves 3 and is free from grains, gluten, dairy, eggs and is suitable for vegetarian, vegan and paleo protocols.
2 medium zucchinis
1/3 each of a red, green and yellow capsicum*
1 small carrot
2 tblsp sesame or olive oil
2 tblsp tamari
2 1/2 tblsp sesame seeds
wedges of lime to serve
salt & pepper to season
*Please feel free to make this with vegetables you have on hand. If you don’t have capsicums other great vegies to use are snow peas, baby corn, green beans, bean shoots, celery – let your imagination (or fridge forage!) go wild.Eat the rainbow – cute huh!
Wash all your vegetables.
As fine as you can julienne your carrot and capsicums into thin strips like above picture. If you have a vegetable mandolin use this for perfect strips – anyone who can use a mandolin hats off to you. I am so scared of them!!
Place your julienned vegetables into a big salad bowl and get ready to spiralise your zucchinis.This is the spiraliser I have recently discovered. I’d had this fancy stand up one with removable blades that cost quite a bit of money but I wasn’t that thrilled with it (it made skinny zoodles and was a pain to clean) This one is so much better! Nice fat zoodles like a proper noodle and I only need to rinse it under water to clean. Plus it’s CHEAP – last look it was only $34.95. Best investment.This is the size of it, it’s hand held with no fiddly blades and has two different thicknesses. You can find it at Biome Eco Stores here.
Spiralise your zucchinis straight into the salad bowl. Now it’s time for the dressing!
To dress I sprinkle straight over the salad the tamari, oil of choice and sesame seeds. I don’t mix this in a separate bowl, ain’t nobody got time for that.
Now toss through all the ingredients to combine well.Have a little taste and season to your liking with salt & pepper. I’m loving the Murray River Gourmet Salt – that’s not expensive either and it’s crazy what a difference good salt makes!!Serve with wedges of lime and voila! Your fresh, raw, detox salad is served. YUM!
