Peanut Butter Fudge Bites

Peanut butter is one of lifes most delicious flavours, and we are mad about it in this house! For this recipe I wanted something so easy to make (of course!), basic ingredients, minimal prep and minimal clean up. Tick any boxes?pb 9This is so tasty, and also rich, and packed full of good fats and natural proteins so you really don’t need to have much. I know what you are thinking but honestly it’s true! It is free from grains, gluten, eggs, dairy and refined sugar, and suitable for GAPS protocols. There is also an easy vegan option.

Makes 25 squares.


2/3 cup quality peanut butter
1/4 cup coconut oil
1/4 cup honey*
1 tblsp coconut flour
pinch salt (adjust to taste whether using salted or unsalted peanut butter)
2 tblsp chopped peanuts (raw, roasted, salted or unsalted ok)

*substitute the honey for the same quantity rice malt syrup or maple syrup for a vegan version. Untitled design (16)


Place the peanut butter, honey and coconut oil into a small saucepan.

Over a very gentle heat start to melt the ingredients. When they have only just started melting remove the pan from the heat, the residual heat will continue to melt the ingredients. This is quite easy to burn at this stage so watch it, it will literally only take a minute or two to begin to melt.

Add the coconut flour and pinch of salt to the pan and combine gently until they are all mixed through. There’s no need to transfer it to a mixing bowl, ain’t nobody got time for extra dishes!

Line a small slice tray (approx. 18 x 18cm) with non stick paper.

Pour the mixture in. It is so hard to not eat it at this point but trust me it is worth the wait! Sprinkle over your chopped peanuts and place in the freezer for around one hour to set.

Remove from the freezer and cut into squares.

This will need to be stored in the freezer and then left at room temperature for 10 minutes before serving. (I have no patience at all and eat it straight from the freezer! Tsk!)pbf4This will last for donkeys in the freezer, but I don’t think that will be a problem #tooyum.
