It’s crazy these marshmallows are good for you because they taste just like you would imagine them to be – only they’re minus the bad stuff. They can even toast (say what!) and in the cooler months they are soo good in a Real Hot Chocolate. We also love these in lunchboxes as a fun treat. In this recipe I have made the basic, basic ones, but there are lots of fun options to go with too. These marshmallows are really simple to make and free from gluten, grains, dairy, eggs, nuts and refined sugar. They are suitable for Paleo & GAPS protocols and use the goodness of pasture raised gelatin to help heal and strengthen the gut wall.
I will include some optional extras to use for either different flavours or added benefits which you will see below. If you do not have these please go with the basic recipe, they are still beneficial and yum!
This recipe is for use in a Thermomix and makes about 35 marshmallow squares.
Other optional extras – cacao powder, raspberry powder, Nutraorganics Velvet Latte Mix or Mermaid Latte Mix, probiotic powder (or contents of probiotic capsules), turmeric powder.
In a small pan place half the cup of water, vanilla and the honey and allow to simmer at medium heat for 8 minutes. It is important it has this amount of time to both reduce and also hit the appropriate temperature for it be able to whip up later.
While that is cooking add the Grass Fed Gelatin to the remaining half cup of water, combine and let sit so the gelatin can absorb the water and thicken.
Once your honey mixture has simmered long enough remove from heat.
Place the water gelatin mixture into the Thermomix. It will be very thick and this is ok!
Place your butterfly whisk into your Thermomix and close the lid with the Measuring Cup in. We are going to slowly pour in the honey mixture on to the lid so it can drip in under the measuring Cup with the whisk going. Slowly pour it in for 1.5 minutes at Speed 2.5.
Do not stop the Thermomix now and increase the Speed to 4 for 5 minutes.
Turn off the Thermomix and look at all that fluffy whipped goodness! If you are using Marshmallow Root Powder you can add this now – sprinkle it in and use a spatula to combine. You will need to work quickly before the marshmallow mixture sets.
Marshmallow Root is an incredible immune booster especially for respiratory conditions, colds, flus and also for inflamed gut conditions. I know this is a perculiar ingredient so don’t sweat if you don’t have it. If you do want to get some this is such a great herb for Winter to have and you can find it in your Health Food Shop or there are a variety on iHerb here – the taste is a bit earthy and is lovely in this recipe. Otherwise if you are not using Marshmallow Root Powder feel free to add the other optional extras in the same way now, or just leave as the basic recipe.Line a slice dish with non stick paper and pour your mixture in. Again work quickly before it sets.
Leave to set at room temperature for at least one hour.Cut into cubes and store in an airtight container in the pantry for up to 5 days.
