This is another recipe that has stood the test of time with our family. When we started the gut healing GAPS Protocol a couple of years ago as treatment for my eldest who has Autism I tried sooo many pancake recipes. Ah the fails!! It actually tipped me over at one point early on in the protocol, scraping another wasted batch of sticking, crappy, crumbly pancake fail into the bin. Roast Pumpkin & Haloumi Fritters

One for the savoury files, this recipe is soo easy. Minimum effort yeilds delicious results – everything gets thrown into one bowl, mixed and then cooked. These fritters are super versatile too, they are great for lunchboxes (they rock as leftovers!), awesome for brunch, lunch or dinner (try with a big serve of yummy rocket leaves on the side, also super quick) and they are perfect for entertaining, you can even halve the size you cook to teaspoon size for the cutest little canapes! Raw Lemon Slice

This slice reminds of when I was younger and one of my friends mums made this really traditional lemon slice. It had a really Aussie vibe to it – biscuit base, probably crushed Arnotts biccies, and an icing sugar lemony topping. Sweet, sour and irresistible.
